Recipes for sleep:
Turkey
and Broccoli Alfredo
Ingredients:
1 pound fettuccini pasta
1 ½ cup of real butter(cut into pieces)
1 pound cubed boneless, skinless turkey breast
2 16oz. Whole milk ricotta cheese
1 pint heavy cream
1 teaspoon of salt
1 cup fresh grated parmesan cheese
1-2 crowns of broccoli
Directions:
1.In large pot bring salted water to a boil. Add fettucini noodles and
cook 8-10 minutes or to desired tenderness.
2.While noodles are cooking steam broccoli until it is bright green
and tender, set aside.
3.Saute turkey in medium skillet using two tablespoons of butter. Cook
until the juice is clear and the meat is no longer pink.
4.In large saucepan combine, parmesan cheese, ricotta, heavy cream,
salt and the rest of the butter. Cook on medium for 10 minutes. Stir
in fettucini, chicken and broccoli. Stir until heated throughout.
5.Serve, and sleep well.
Shrimp and Rice Stuffed Tomatoes
Ingredients:
1 3/4 cups uncooked long-grain rice
4 large ripe tomatoes
1 teaspoon olive oil
1 cup chopped onion
1 clove garlic, minced
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh oregano
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 pound medium shrimp - peeled and deveined
1/2 cup hot water
Directions:
1.Cook rice according to directions. Take 2 cups of cooked rice and
pour into a large bowl.
2.Preheat oven to 350.
3.Cut the tops off of the tomatoes(save), dig out the pulp and save
½ cup to the side, trash the rest.
4.In medium skillet heat oil on medium high. Add onion and saute for
3 minutes. Add garlic and saute for 1-2 minutes. Add saved tomato pulp
and cook for 5 minutes, the liquid should be evaporated. Add the remaining
ingredients to the 2 cups of rice.
5.Place tomato shells in baking dish, add hot water, bake 40 minutes,
serve hot or cold.
